Why no ceiling vent in kitchen? 30RK

Does anyone know why they put a skylight and not a vent in the kitchen ceiling? And why is it rectangle? I would love to put a fantastic vent in that spot, but unless fantastic vent starts making a rectangle version...

Has anyone changed out this skylight for a vent somehow?

250 rb is the same, I've often wished I had a big vent fan in the roof there instead of the skylight. Shade stays closed on the skylight most of the time.
