We had the same problem with our 2013 305SK. We had our dealer replace original non adjustable thermostat with an adjustable one. Its made by Atwood, same as the water heater. It has 5 heat settings, A thru E, and B or C is plenty hot. Model # GC10-4E. Works great.
While the WH temperature is set pretty high, we found it not to be an issue because we'll use less hot water when needed because we temper it with more cold water.

Sorry guys, it's just the DW and I, I didn't give thought to children, so yes you are correct. If I had children travelling with us I would probably add a device to temper it down some.

I may be mistaken but I thought the I read that you could change the temp by sliding the gas venturi regulating the temp. For the electric part I'm not sure. Have to get the manual out again.
Just purchased a new Atwood Thermostat #91470. Suppose to be lower temp than original. Will let you know how it works once we get it installed.
Well, temp is still pretty hot - 157°. Could be a defective thermostat cause my other one let the temp get to 165°. So ordered another one to see if it gets lower. If this doesn't work gonna try an adjustable one. I'm wondering if the water is so hot because my kitchen faucet is just above the water heater?
