I have a Crossroads 2007 CF29RE fifth wheel, when it comes out of storage in the spring, I will be getting new tires for it, currently ithas 225/75/15 Load Range D, I will be either going to Maxxis 225/15/75Load Range E, or am considering new 16'' rims and LT tires, hasanyone triedthis on this particular model, will the 16'' wheels have the clearance I will need?

A 16" tire and wheel will only be 1/2" higher if you stick with the same 225/16 /75. This is what I did on my 07 Zinger.

With the ride alone I would never go back. This is also a much safer tire setup imho. I was able to swap my 4 15" tires and rims for 4 16"empty rims.

how will I know if they will fit with my stock set up of - 08 Zinger 30BH??? I am looking for tires but if rims/tires would give a better ride I would be in

The 2 best things you can do for a better ride is tires and equa-flex supension or shocks.
