Hi all, I'm on my first weekend with a new ST31BH. All is well except I can't seem to find the valve I would expect to open to fill the fresh water tanks from the city water connection (rather than just feeding the taps directly which is what it's doing now).

In my old RV I Would flip a valve near the pump. This trailer has no such valve in the plumbing area that I can find. The plumbing seems to be concentrated behind the hot water heater under a panel.

Much thanks.

If I understand your question correctly, there is no valve. You fill the tanks with the capped water fill spout normally located near the fresh water tank behind a locked door on the outside of the rig where your hose connects. You can either use the hose to supply water for the RV or you can fill the fresh water tank with the hose in the fill spout. There is no valve to fill the fresh water tank once the hose is connected to the RV supply.
