Low water drain?

Where is that pesky low water drain? I have an STR 32FR. Directly under my water heater, I see a red drain and a blue drain. Slightly further back under the camper, in line with those, I see another blue drain. I'm assuming that is the fresh water tank drain? If so, is there a secret to getting the spout cover off? My kid was trying to unscrew it, but the white piece above the black cover was spinning and it wouldn't come off.

I've got my camper winterized except draining that tank and the HWH, I didn't take the right size tool with me to pull the drain plug on the HWH, so I'll do that later this afternoon.

I'm so excited we managed to do this ourselves!

The fitting is spinning inside the pex pipe. Just hold it with pliers and unscrew cap .That is the fresh tank drain.
The blue and red are your cold and hot low point drains. Unscrew them and open all taps inside to recover the pink in the lines and dump it toilet and traps.
