Never made it before, but for what it cost to buy, or have made at a meat plant, I thought I would give it a try. Went to town and had the butcher cut the fat off a 4# junk of beef, brought it home, ground it, seasoned it, run it through the dehydrator, and we have got some goood beef jerky. Now I know I can turn some of that venison into good jerky this year. Besides, deer season is just 2 weeks away.

Venison makes some serious good jerky. Heading to PA in a couple weeks for Deer season myself, just picked up a dehydrator two days ago. First time hunting in several years, thought it would cost too much for non-resident license. Good luck Old Farmer.

I started that myself last year. I found that slicing it thin and dehydrating makes it better. I tried the ground method, but couldn't get it to come out of the shooter consistently (probably the cheap shooter I tried). Venison makes the best jerky. It's time to stock up the freeze. Going this weekend to take my daughter hunting (youth hunt weekend here). Plus it's just that much more time camping. I'm packed and ready to go. Just waiting for that 5:00 whistle to blow.

Lloyd - I have made quite a bit of jerky in the past but it was just a matter of cutting the meat into thin slices and dehydrating it. Tell me more about this "Grinding" the meat up first.....can't quite understand how ground up meat can be made into chunks or slabs of whatever pieces of jerky.

Ground meat is suppose to be less leathery. "IF" you don't leave it in the dehydrator to long.

Tried my hand at making venison sticks in a smoker yesterday.
All I can say is emmm, emmm good!!
Going to do some jerky in a few days.

I'm BAAACK. Had serious good time in PA, hunting. Ten hour days in the woods, only bucks I saw were already tagged, and not my tag. Got a doe and some grey squirrels. Am munching on jerky now, had tenderloin butterfly steaks for breakfast and will be eating squirrel for Christmas!
