This is an on going problem with tank sensors. It doesn't matter which tank. They all go goofy.
Yours could be a loose/bad connection behind the panel where you read it, or it could be a bad sensor in the tank, or a bad connection there.
There is a sensor available that will read accurately, but I can't tell you off hand the name of it or where you can buy it.

Mine acts up at times to. I have resigned myself to the fact that when the faucet starts to sputter, the tank is empty.

You may want to use the gray water sensor: https://www.etrailer.com/RV-Sewer/Va.../T21302VP.html

or the fresh water sensors: https://www.amazon.com/KIB-MP5-Screw...X0J5RHSC4KE9NV
